Pavlovas, peach meringue

Ingredients:
- 1 disk of baked meringue
- Whipped cream or Greek yogurt
- 1 can of Facundo peaches (820g)
- 1 box of strawberries
- ½ box of strawberries
- Mint leaves
Ingredients for the meringue cookie:
- 4 large egg whites
- 1 ¼ cup sugar
- 1 teaspoon apple cider vinegar or white vinegar
- 2 teaspoons cornstarch
Whipped cream ingredients:
- 200ml cold cream
- 4 tablespoons of powdered sugar
Instructions:
Preparation of the meringue cookies:
Preheat the oven to 180ºC for 15 minutes.
Place the egg whites in a bowl and beat at medium speed until frothy.
Add the sugar little by little.
Add the vinegar.
Stop beating and add cornstarch, incorporating it with a spatula.
Make a circle of meringue on waxed paper and take it to the oven.
Once in the oven, lower the temperature to 150ºC.
Bake for 40 minutes.
Turn off the oven, open the door a few centimeters and let stand 30 minutes.
Remove and let cool to room temperature.
Preparation of whipped cream:
Put the cream in a bowl and whip until it thickens.
Add sugar and continue beating until you get a consistent cream.
To assemble the pavlovas, place the meringue cookie on a flat plate.
Spread whipped cream or yogurt, place the sliced peaches, chopped strawberries and raspberries.
Decorate with the mint leaves and is ready to enjoy!
