Rice with lentil stew

Ingredients:
- ½ cup of Facundo white rice
- ½ bag of Facundo lentils
- 2 cloves of garlic, peeled and chopped
- 1 red onion, chopped
- ½ chopped carrot
- ½ red and green bell pepper, minced
- 1 large potato, peeled and diced
- 50 g of Facundo tomato paste
- 2 bay leaves
- 3 tablespoons of vegetable oil
- Salt and pepper to taste
Instructions:
Preferably soak the lentils for 12 hours before starting the preparation.
Heat the oil in a pot. Add all the vegetables except the tomato paste and stir-fry for 5 minutes.
Add the tomato paste or sauce and cook for 3 minutes.
Add the lentils, bay leaves and chopped potatoes.
Add cold water until it exceeds the level of the lentils by 2 centimeters.
Cover the pot and let it cook for 15 minutes if you are using an express pot, or for 50 minutes in a regular pot.
To prepare the rice heat oil in a pot, add some chopped garlic and after 2 minutes add the washed rice.
Add twice the amount of water in relation to the amount of rice.
Wait until the water boils and let the rice simmer.
Serve the lentil stew with the rice and the side dish of your choice, the creativity is up to you!
