Stuffed rice with shrimp

Ingredients:

  • ½ kilo of washed shrimp
  • ½ cup of Facundo white rice
  • 1 cup of Facundo frozen peas and carrots
  • 2 teaspoons of ground cumin
  • 2 cloves of crushed garlic
  • 2 tablespoons of oil
  • 3 tablespoons of butter
  • ½ teaspoon achiote
  • ½ red onion cut in cubes
  • ½ bell pepper, diced
  • 2 tomatoes, peeled and seeded, diced
  • Handful of cilantro
  • A dash of white wine
  • Salt and pepper to taste

Instructions:

Mix in a bowl the shrimp, salt, pepper, cumin, garlic and let it sit for 1 hour in the refrigerator.
Boil a pot of water and add the shrimp for 2 minutes. Remove the shrimp and save 2 cups of the water in which they were cooked.
Peel and chop half of the shrimp.

Heat the oil in a pot, add chopped garlic and after 2 minutes add the washed rice.
Add the water where the shrimp were cooked, double the amount of water in relation to the amount of rice.
Wait until the water boils and let the rice simmer.

In a frying pan melt the butter, add onion, bell pepper, tomatoes, parsley, achiote, cumin, salt, and pepper. Cook for 10 minutes and add the wine.
Add the refried sauce and chopped shrimp to the rice while it is simmering. Add the whole shrimp and mix everything together. ¡Enjoy!
