Sweet corn and almond muffins

Ingredients:

  • 150 gr of Facundo canned sweet corn
  • 100 gr of butter
  • 3 eggs
  • 50 gr of sugar
  • 150 gr of whole wheat flour
  • 1 tsp of baking powder
  • ¼ cup of chopped almonds
  • ½ cup of fresh cheese
  • 1 small white onion, chopped

Instructions:

Mix the sugar with the butter at room temperature with an electric mixer. Add the eggs, one at a time, to the sugar and butter mixture. Separately, add the baking powder to the flour and add it little by little to the first mixture. Finally, blend the corn kernels, cheese and onion and add them to all the previous ingredients. Add the almonds in an encircling way.
To finish, grease some muffin pans and pour all the mixture. Preheat oven at 350ºF or 180ºC and bake for 25 to 30 minutes.

Enjoy them with a cup of coffee!
